Asian Brown Rice Noodle and Green Salad

1/2 head broccoli
100g green beans
1 cup chopped kale
200g brown rice noodles (Woolworths)

2cm ginger grated
1 clove of garlic crushed
2 limes juiced
2 tbsp soy sauce
2 tbsp sesame oil
1 tbsp balsamic vinegar

1 sheet of nori crushed
1 tbsp toasted sesame seed
1 tsp fresh chilli / chilli flakes (optional)

Steam veggies for 4 minutes. Cook rice noodles as directed and drain.

Mix together the dressing and pour over the softened rice noodles. Add veggies and gently combine. Sprinkle over the nori, sesame seeds and chilli and serve with your choice of protein. Eg chicken, whole poached eggs or tofu.
