Who doesn't love a delicious dish of meatballs and mash for a quick family dinner. Here is our Dietitian and Coach Matt's special meatball recipe, laced with plenty of nutritious veggies. The family will love it!

500g pork/beef mince
1 heaped tbsp Dijon mustard 
1 tsp smoked paprika 
1 tsp Thyme or oregano leaves
1/2 tsp coriander powder 
Salt & pepper
2 tbsp BBQ sauce
1/2 cup quick oats or breadcrumbs

Mix together in a bowl. Shape into meatballs.  You can:-
1. Place meatballs into a cast iron dish that can go on the stove to brown the meatballs first, 
2. Brown meatballs in a frypan that can go into the oven; or
3. Place the meatballs straight into a casserole dish without browning if you are short on time. 

Slice up some zucchini and carrots (we use a v-slicer) and put in the casserole dish. 

Mix 2 cups Passata with 1 tbsp of balsamic vinegar and pour this over the meatballs and veggies.

Bake for 20 minutes in the oven at 180 degrees fan forced. 

Serve with mashed potato and salad on the side.
