PESTO TURKEY MEATBALLS

  • 500g turkey mince
  • 3 tbsp pesto
  • Handful sliced shallots
  • ¼ cup quick oats
  • 1 egg
  • Salt & pepper

PESTO

  • 1 large bunch of basil (leaves removed)
  • 2 tbsp Parmesan cheese
  • 1 large handful of macadamia nuts
  • 1 tbsp good quality olive oil
  • 1 clove garlic (optional)
  • Salt and pepper to taste

1. Start by making the pesto. Throw all the pesto ingredients into a small food processor and pulse until the desired consistency.

2. Place all the meatball ingredients into a bowl and mix.

3. Shape mixture into meatballs.

4. Place on a baking tray and bake @ 180 degrees for 15-20 minutes.
