Pumpkin Oat Breakfast Biscuits

Make these delicious breakfast biscuits and keep them in the fridge for a quick brekky on the run!

 

 

1 cup rolled oats

1 cup quick oats

2/3 cup crasins (dried cranberries)

2/3 pepitas (pumpkin seeds)

2 tbsp chia seeds

2 tsp ground cinnamon

1/2 tsp nutmeg

1/2 tsp salt

1/4 cup coconut oil

1/4 cup maple syrup or honey

1/2 cup pumpkin puree (roasted or boiled pumpkin that has been blended till smooth)

2 eggs

 

 

Preheat over to 180 degrees.  In a large bowl, mix together the dry ingredients - oats, crasins, pepitas, chia seeds, salt, cinnamon and nutmeg.

In a small blender or bowl, blend or whisk together with coconut oil, maple, pumpkin puree and eggs.  Add to the dry ingredients and mix well.  Put 1/4 cup sized scoops onto a baking tray and bake for 15-20 minutes.
